An afternoon run, a meal recap, and the most delicious smoothie ever

What a beautiful day in Nashville! As much as I wanted to kick off the new week with a good workout, I had a meeting at 10am so that meant saving it till later in the afternoon. Any other day that would most likely lead to a skipped workout all together, but today I was determined. Even though I was pressed for time, I managed to put in 2.5 miles and burn 280 calories. Better than nothing!

And when I got home, I made the most delicious post-workout smoothie that tasted like a chocolate-covered strawberry! Which brings me to…

What’s on the menu?

IMG_0757For breakfast, I heated up some oatmeal with blueberries and chopped up some honeydew melon, too. A cup of coffee and 3 tsps of creamer rounded out a 382-calorie breakfast.

IMG_0764I had a huge, delicious lunch. We grilled out on Sunday and so I had plenty of leftovers to choose from. I went with a grilled chicken breast with grilled veggies (squash, onion, zucchini and bell peppers) and a baked potato with a little salt, pepper, and Land O Lakes whipped butter totaling somewhere in the ballpark of 530 calories.

IMG_0766My post-workout smoothie consisted of 4oz of POM Wonderful 100% Pomegranate Juice, 4oz of Dannon Fit & Light Strawberry Yogurt, 1 cup of mixed frozen berries, and a packet of Chocolate Amazing Grass SuperFood. My favorite smoothie creation thus far! For a snack, it was a little pricey calorie-wise at 230 cals, but if I leave out the frozen fruit next time it’ll be a more manageable 160 cals.

IMG_0768For dinner, I decided to try a new recipe. Over the weekend, I went to the Farmer’s Market and (among several other fresh finds) picked up an eggplant for $1! I baked two eggplant slices at 350 degrees for 20 minutes. Afterward, I spread a small amount of light mayo on both slices and sprinkled rosemary, garlic salt and pepper on top. Finally, I topped that with 2 tbsps freshly grated parmesean cheese and broiled for a minute or so. On the side, I had a simple cucumber salad (thanks to my grandpa for sharing the cucumbers from his garden!) with light italian dressing. 154 calories total.

As for my goal of drinking more water, I feel like I did well today! Tomorrow, I’ll actually start keeping a running total.
